Raspberry Mojito

Light and sweet, this Raspberry Mojito is a delicious, minty cocktail to enjoy on a hot summer evening.

  • 1 oz. simple syrup
  • 1 Tbs. torn mint leaves
  • 1 oz. lime juice
  • 2 oz. white rum
  • 1/2 oz. Chambord liquor
  • 3-4 oz. club soda
  • fresh raspberries for garnish (optional)


  1. In a small bowl, muddle simple syrup and mint leaves, gently pressing down on mint to release the flavors. Strain simple syrup into a highball glass, discarding mint leaves.*

  2. In the glass with the simple syrup, add lime juice, rum and Chambord. Stir. Add 1/4-cup of ice. Top with club soda and garnish with a skewer of fresh raspberries, if desired.

  3. Serve immediately.
