Light and sweet, this Raspberry Mojito is a delicious, minty cocktail to enjoy on a hot summer evening.
In a small bowl, muddle simple syrup and mint leaves, gently pressing down on mint to release the flavors. Strain simple syrup into a highball glass, discarding mint leaves.*
In the glass with the simple syrup, add lime juice, rum and Chambord. Stir. Add 1/4-cup of ice. Top with club soda and garnish with a skewer of fresh raspberries, if desired.
Serve immediately.
Straining the simple syrup is optional.
