Everything But the Bagel Avocado Chicken

This baked chicken breast combines all the things we love - crunchy chicken, everything but the bagel seasoning, smashed avocado, and your favorite topping. Everything But the Bagel Avocado Chicken is easy to make and big on flavor so it'll come as no surprise when it quickly becomes a weeknight favorite.

Ingredients

Ingredients for the Chicken:

  • cooking spray
  • 1/2 c. all-purpose flour
  • 3/4 tsp. kosher salt
  • 1/2 tsp. black pepper
  • 1/2 tsp. paprika
  • 2 large eggs
  • 1 c. panko breadcrumbs
  • 2 Tbs. Everything but the Bagel seasoning
  • 4 4-oz. chicken cutlets (I used 2 breasts, trimmed, cut in half)

Ingredients for the Avocado Topping:

  • 2 medium ripe avocados
  • 1 clove garlic
  • kosher salt
  • black pepper
  • 1/2 Tbs. lime juice optional

Optional Toppings

  • cooked bacon, crumbled I used 1 slice per chicken breasts
  • sliced hard boiled eggs
  • bruschetta or pico de gallo
  • additional Everything but the Bagel Seasoning

Instructions

Make the Chicken:

  1. Preheat oven to 400F. Spray a baking sheet with cooking spray and set aside.

  2. Prep for breading. In one shallow bowl, gently stir together flour, salt, pepper, and paprika. In a second shallow bowl, whisk together eggs. In a third shallow bowl, mix together breadcrumbs and Everything but the Bagel seasoning.

  3. Dredge each chicken cutlet first in flour, then in egg, then in breadcrumb mixture. Place chicken cutlet on prepared baking sheet.

  4. Bake for 30 minutes, until cooked throughout (chicken should have an internal temperature of 165F).

Make the Avocado:

  1. While chicken is cooking, mash avocados and garlic. Season with salt and pepper, to taste. If not serving immediately, add lime juice to minimize browning. Set aside.

Assemble & Serve:

  1. Spread 1/4 of avocado mixture on top of each baked cutlet. Add any desired toppings and serve immediately.

  2. (If you anticipate leftovers, wrap cutlets separate from avocado mixture and toppings. Reheat cutlet and then assemble just before serving.)
