Fresh watermelon juice is sweetened every so slightly, studded with mini chocolate chip "seeds" and then frozen into Watermelon Sorbetto Popsicles - a refreshing, healthy summer treat.
In a small pot, heat 1/2 c. of watermelon juice, sugar, and salt. Heat, stirring occasionally, until sugar has dissolved. Remove from heat and pour into a large bowl containing the remaining watermelon juice. Stir in lime juice.
Allow to cool until room temperature.
Pour into popsicle molds and add a few mini chocolate chips to each popsicle, before putting in the stick.
Freeze for at least 6 hours, until very firm.
