Watermelon Sorbetto Popsicles

Fresh watermelon juice is sweetened every so slightly, studded with mini chocolate chip "seeds" and then frozen into Watermelon Sorbetto Popsicles - a refreshing, healthy summer treat.

Ingredients

  • 3 c. watermelon juice divided (from about 3 lbs. watermelon)
  • 1/2 c. granulated sugar
  • pinch salt
  • 1 Tbs. fresh lime juice
  • 2 Tbs. semisweet mini chocolate chips

Instructions

  1. In a small pot, heat 1/2 c. of watermelon juice, sugar, and salt. Heat, stirring occasionally, until sugar has dissolved. Remove from heat and pour into a large bowl containing the remaining watermelon juice. Stir in lime juice.

  2. Allow to cool until room temperature.

  3. Pour into popsicle molds and add a few mini chocolate chips to each popsicle, before putting in the stick.

  4. Freeze for at least 6 hours, until very firm.

Recipe Notes

  • To make fresh watermelon juice, remove rind and cube watermelon. Transfer to a food processor or blender and process until smooth. Do not strain.
  • This recipe makes about 3 cups of sorbetto, enough for 6 1/2-cup popsicles (using a mold similar to what I've linked above) or 12 1/4-cup popsicles (which is what you see in my photos). Nutrition was calculated assuming 1/4-cup popsicles.
