Peach Scones

Light and fluffy with sweet fresh peaches, these Peach Scones are a wonderful snack to accompany an afternoon cup of tea.

Ingredients

  • 1 c. all-purpose flour plus more for dusting counter
  • 1 Tbs. granulated sugar
  • 1 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 fresh peach chopped
  • 1/2 c. vanilla Greek yogurt
  • 1 large egg
  • 1 Tbs. unsalted butter melted

Instructions

  1. Preheat oven to 425F. Line a baking sheet with parchment paper or silpat and set aside.

  2. In a medium bowl, whisk together flour, sugar, baking powder, baking soda and salt.

  3. Add chopped peaches and stir to coat. This will keep the peaches from sticking together.

  4. Stir in yogurt, egg, and melted butter. Dough will be very wet.

  5. Lightly flour a clean counter. Turn dough onto counter and pat into a 1/2-inch thick round. Cut into 8 triangle. Transfer to prepared baking sheet.

  6. Lower oven temperature to 400F. Bake scones for 12-15 minutes, until cooked throughout and lightly browned. Allow to cool for a few minutes on the baking sheet before transferring to a wire rack to cool completely.
