Homemade Pancakes + Pancake Mix

Homemade pancakes are easier than you think. This big batch pancake mix gets mixed up in a flash for weeks of homemade pancakes or for holiday gifting. The fluffy pancakes will disappear quickly!

Ingredients

Ingredients for the Pancake Mix:

  • 6 1/2 c. all-purpose flour
  • 1 c. cornstarch
  • 1 c. confectioners' sugar
  • 1/4 c. baking powder
  • 1 tsp. baking soda
  • 2 tsp. kosher salt

Ingredients for the Pancakes:

  • 2 1/4 c. Pancake Mix (above)
  • 1 1/4 c. whole milk
  • 3 Tbs. unsalted butter melted
  • 1/2 tsp. vanilla extract optional
  • 2 large eggs lightly beaten

Instructions

Make the Pancake Mix:

  1. In a very large container or bowl, add all ingredients. Gently whisk together until combined.

  2. Store in an airtight container until ready to use.

Make the Pancakes:

  1. Stir together all ingredients in a large bowl. Allow to sit while a skillet is heating.

  2. Heat a large non-stick skillet over medium heat. When hot, portion pancake batter onto hot skillet, 2-3 inches apart. (I usually use a 2 Tbs. size tablespoon - the spoon that comes with most dinner utensil sets - although you could also make larger pancakes with a 1/4 c. scoop.) Allow to cook for about 2 minutes, until pancakes are golden and set on the bottom. Flip, and continue to cook until golden and pancake is cooked throughout, another minute or two.

  3. Serve hot. Leftovers may be cooled and refrigerated in an airtight container.
