This is my second year participating in #SpringSweetsWeek, and boy has spring come early! It made it easy to get into the baking spirit! If you were with me last year, I shared my family’s no-fuss Carrot Cake recipe, a fun Cottontail Chex Mix that the kiddos adored, a Spring Sugar Cookie Cake that disappeared quicker than I’d like to admit, and a healthier sweet – a Strawberry Raspberry Smoothie. I could have happily remade any of those again (and will definitely do so this spring), but this week, I have 3 new recipes to share with you.

This year, despite the weather, the week is starting off on a heavier note – with many of us home or working in stressful situations as we all do our best to limit the spread of COVID-19. While it feels weird to be sharing lots of sweets this week, being in the kitchen is an important outlet for may at this time. So despite the gloom and doom of the world today, enjoy the beautiful spring weather we’ve been having, and perhaps welcome spring with one of the sweets that myself or my blogging friends are sharing this week.

Today, I’m kicking things off with a family recipe – Sponge Cake. I grew up with this being served most frequently at Christmas time. While it’s a cake, it’s not super sweet. Instead, it’s rich in vanilla flavor and light and airy. This cake is made from pantry staples, so even with limited options at the grocery store, you should be able to make this. While technically a cake, I grew up watching my grandfather eating it for breakfast, snack, and dessert, so go ahead! Indulge! And enjoy!

Recipe Notes:

  • Unlike many baking recipes, eggs and milk do not need to be at room temperature. 
  • I used a non-stick 9×13 inch cake pan from our sponsor Anolon for this recipe. The pan from this set is the specific pan I have (affiliate link), and it’s a wonderfully heavy pan with rubber grips on the handles, just like the brownie pan that I used a few weeks ago for Peanut Butter Blondies. <3 these pans! After just one use, they immediately became my favorites.

Sponge Cake

My family's sponge cake is just barely sweet, light with little pockets of air throughout. Enjoy it on it's own for snack, afternoon tea, or dessert, or sweeten it with fresh fruit and whipped cream.

Ingredients

  • cooking spray
  • 6 large eggs
  • 1 c. granulated sugar
  • 3 c. all-purpose flour sifted
  • 3 tsp. baking powder
  • pinch of salt
  • 3 tsp. vanilla extract
  • 1 c. milk I use 1% or 2%
  • 1 c. vegetable oil

Instructions

  1. Preheat oven to 325. Spray bottom and sides of a 9x13 inch cake pan with cooking spray and set aside.

  2. In the bowl of a stand mixer, beat eggs and sugar until well combined. Add remaining ingredients and mix on low, just until you are certain that the ingredients won't splash out of the bowl.

  3. Increase speed to medium-low (#4 on a Kitchen Aid Stand Mixer) and beat for 2 minutes. Turn off mixer and check batter - air bubbles should be starting to bubble up to surface. If there are no bubbles, continue beating for 30-60 seconds more, until you see those bubbles when the mixer is turned off.

  4. Pour into prepared pan and bake for 55-60 minutes. Allow to cool before serving.

  1. Re the sponge cake, and this is something I have often wondered about.
    Recipe calls for 3 cups of flour sifted. Do you measure before or after the sifting ?
