This Sheet Pan BBQ Meatloaf Dinner is a one-pan, complete meal. Individual BBQ meatloaves are baked along side green beans and potatoes for a meal that quickly became a favorite in our house!
The past few weeks have been a whirlwind. A good whirlwind, but incredibly busy leaving me feeling slightly exhausted. What have I been doing?
- Virtual schooling and getting ready for the kids to return two days a week – just a few more days until they board the bus! Miss. Hazelnut hasn’t been in a school in a year. And Mr. Nutterbutter will be finally stepping foot in his new school and riding the bus for the first time!
- Blogging. Lots of blogging. I’ve managed to get 6 new recipes made and blogged in the past two weeks. We’ve run the dishwasher a lot, and I only spilled one cocktail while attempting to photograph it.
- I got vaccinated! I showed up expecting the Pfizer vaccine only to get the new Johnson & Johnson one. It was so new that I didn’t know what to expect in terms of side effects so I was a bit apprehensive, but it worked out. I ended up with a tender arm for a few days, some serious chills (probably not from the vaccine but from the 90 minutes in the cold and wind waiting for the vaccine), and some tiredness. But given what I’ve heard from others, I can’t complain. AND I’M VACCINATED!!!
Sheet Pan BBQ Meatloaf Dinner Recipe Notes:
This sheet pan meal is one I’ve been making a lot lately. It’s not the easiest or prettiest to photograph but my husband and I love the sweet BBQ flavor. Bonus points for being a well-balanced, complete meal. A few notes:
- I usually pack everything onto one baking sheet, but you may want to use a second if it’s too crowded.
- I tweaked the original recipe, using a mix of ground beef and ground turkey instead of just ground beef (as we are watching our red meat intake), and making slightly bigger loaves for our larger appetites.
- Finally, I reduced the amount of BBQ sauce mixed in slightly because it felt very wet and fell apart after baking, despite resting.

Sheet Pan BBQ Meatloaf Dinner
This Sheet Pan BBQ Meatloaf Dinner is a one-pan, complete meal. Individual BBQ meatloaves are baked along side green beans and potatoes for a meal that quickly became a favorite in our house!
Ingredients
- cooking spray
- 24 oz. fingerling or other small potato
- 6 tsp. extra virgin olive oil divided
- kosher salt
- black pepper
- 16 oz. green beans cleaned and trimmed
- 1 lb. 90% lean ground beef
- 1 lb. ground turkey
- 1/2 c. plain breadcrumbs
- 2 tsp. garlic powder
- 3/4-1 c. BBQ sauce divided
Instructions

Preheat the oven to 400F. Spray a baking sheet (or two) with cooking spray and set aside.

Halve or quarter the potatoes so that they are roughly the same size. In a medium bowl, toss potatoes with 4 tsp. of olive oil and sprinkle with salt and pepper. Spread onto prepared baking sheet and bake in preheated oven for 20 minutes.

While potatoes are cooking, transfer green beans to the bowl used for the potatoes. Toss with remaining 2 tsp. olive oil and sprinkle with salt and pepper. Set aside.

In a large bowl, use clean hands to mix together ground beef, ground turkey, breadcrumbs, garlic powder, and 1/2 c. BBQ sauce. Mix until well combined.

When potatoes are ready, remove from oven and mix. Push to one end of the baking sheet (if only using one baking sheet). Add green beans in the center. Form 6 mini meatloaves, and place on the last third of the baking sheet.

Return baking sheet to oven and continue cooking for another 25 minutes, until meatloaves are cooked throughout. Remove baking sheet from oven and adjust oven temperature to broil. Brush each meatloaf with 1 - 1 1/2 Tbs. BBQ sauce. Return baking sheet to oven and broil for 3 minutes.

Remove baking sheet from oven and allow to rest for 5 minutes before serving.
