I mentioned it a few months ago, but I think the times we’re in right now have been difficult for a lot of people. Two of my most well-read recipes the past few months continue to be cocktails –The Frenchy and my Classic Cosmo. And I’m not going to lie, I’ve been enjoying more than my share of wine and cocktails myself. Being home all of the time, homeschooling my children, and not having a solid dose of alone time or time out with friends…. it’s just HARD.
And so, when Michelle from Our Crafty Cocktails wanted to celebrate summer with Summer Cocktails, I jumped. I was excited both to share a new recipe and to bookmark some tried and true cocktail recipes from my blogging friends.

Which one would you try first?
I’m excited to share a Raspberry Mojito recipe today. I am a sucker for raspberry flavors. In this case I use Chambord liquor to get that flavor. The cocktail is sweet and tart but oh so refreshing. Had my kids not been up and running around when I was recipe testing, I probably would have made myself a second.
Recipe Notes:
- Variations: Instead of the traditional mint, use basil.
- Chambord: This is the only raspberry liquor I’ve ever used and can’t recommend it enough. If you’re hesitant to buy a bottle just for this recipe, I’ve got you covered. I like to sip it straight up or on the rocks and make a quick Chambord sour using store-bought sour mixes. In addition, Chambord is used this Sparkling Chambord Sangria and my Raspberry Chambord Sorbet.

Raspberry Mojito
Light and sweet, this Raspberry Mojito is a delicious, minty cocktail to enjoy on a hot summer evening.
Ingredients
- 1 oz. simple syrup
- 1 Tbs. torn mint leaves
- 1 oz. lime juice
- 2 oz. white rum
- 1/2 oz. Chambord liquor
- 3-4 oz. club soda
- fresh raspberries for garnish (optional)
Instructions

In a small bowl, muddle simple syrup and mint leaves, gently pressing down on mint to release the flavors. Strain simple syrup into a highball glass, discarding mint leaves.*

In the glass with the simple syrup, add lime juice, rum and Chambord. Stir. Add 1/4-cup of ice. Top with club soda and garnish with a skewer of fresh raspberries, if desired.

Serve immediately.

Straining the simple syrup is optional.

Raspberry and mint seem like the perfect combination – I love mojitos!
Great minds. I went with blueberry but the raspberry sounds delicious too. I am also a chambord fan.
I adore Chamborde and always have some in the fridge! I’ll have to try this cocktail.
