Earlier this week, I shared that I was lucky enough to received copy of the new cookbook by my friend Brynn (aka The Domestic Dietitian), The Mediterranean Diet Made Easy. I’m not going to lie, there was so much about the book that made me want to host my girlfriends for lunch or cocktails. But since COVID has us still limiting our social circle, my options are limited.
Instead, I cooked for my husband and best friends, our family away from home (and the only family in our quarantine bubble). These Parmesan & Garlic Roasted Sweet Potatoes were a hit – so much so that I sent my besties home with the recipe and a little jar of the Greek Seasoning Spice Blend so they can make this dish themselves.
I make a lot of roasted sweet potatoes – usually with just salt and pepper – but these were a nice change. The spice blend and Parmesan cheese makes them much more savory than my usual side dish. And it was really no harder nor required more prep time. It only took a few extra minutes to toss everything in the bowl to toss. Then, the sweet potatoes were spread on a baking sheet and tossed into the oven. Easy Peasy.
Recipe Notes:
- I used homemade Greek Seasoning Spice Blend in this recipe but feel free to use a store-bought version. The homemade version is made of ingredients many people have in their spice cabinet, so I’d encourage you to try it.
- Serving Suggestions: I served this as a side dish for Simple Oven Roast Chicken but I would happily pair this side dish with grilled chicken or steak.

Parmesan & Garlic Roasted Sweet Potatoes are a savory take on a traditionally sweet side. Parmesan, garlic, and Greek seasoning are tossed with sweet potatoes and roasted for an easy fall or winter side dish.
Ingredients
- 3 c. diced sweet potatoes 1/2-inch dice (from 2 sweet potatoes)
- 2 Tbs. extra-virgin olive oil
- 3 cloves of garlic minced
- 1/4 c. grated Parmesan cheese
- 1 tsp. Greek Seasoning Spice Blend
Instructions

Preheat oven to 400F. Line a baking sheet with parchment paper and set aside.

Toss all ingredients in a large bowl until sweet potatoes are coated. Transfer to prepared baking sheet and spread into a single layer.

Bake for 20-25 minutes, until sweet potatoes are starting to brown but are soft inside. A fork should easily spear a piece.

Remove from oven. Serve hot.
