I hope everyone had a wonderful, safe holiday last week. It’s kind of hard to believe that after such an awful 2020, the year is finally coming to a close. I can’t help but thing that once the year flips to 2021, things will instantly get better. (Totally not going to happen, I know, but a girl can dream.)
We had a quiet Christmas with lots of facetime to exchange holiday greetings with family. The kids are about halfway through a nice long break from virtual learning, which they really needed. Virtual learning is not going terribly – and their teachers are AMAZING – but it’s just soooo much screen time. They need to run around and play. It’s just too much screen time, too much sitting, for my little ones.
Before I hope into some 2020 highlights (next week!), I want to finish off the year with a couple more recipes. I have to say, I’m a bit jealous that more than a couple of my blogging friends are publishing their own cookbooks. I’m so excited for them and so glad I have the opportunity to support them, but I’m also jealous that they’ve found the time to create amazing recipes and take stunning photos, never mind find the time to write a cookbook.
Most recently, my friend Brynn at The Domestic Dietitian, had her first cookbook released – The Mediterranean Diet Made Easy.
About the Cookbook:
First off, I love a cookbook that has a photo of every recipe. This one has it. Bright, simple photos that showcase each recipe. I love it.
The cookbook kicks off with an introduction and then a bit about the Mediterranean Diet. This “diet” is more like a lifestyle, prioritizing daily physical activity, sleep and stress management, healthy social relationships, and a more plant-based diet. Following the introduction are the recipes, broken into the following sections:
- Breakfast
- Small Plates (appetizers and snacks)
- Lunch
- Dinner
- Soups, Salads & Sides
- Sweets
- Sauces & Dressings
The are some more traditional Mediterranean recipes in here based on Brynn’s travels, and other recipes that have been tweaked and updates to consider the realities of time, family and budget. There’s something in here for everyone.
I bookmarked just about every other recipe in the book to try. I could tell just by flipping through that the recipes are both healthy and flavorful.
Recipes Using Greek Seasoning Spice Blend:
- Parmesan & Garlic Roasted Sweet Potatoes also from Brynn’s new cookbook
- Greek Salad with Homemade Vinaigrette
- Whipped Feta Cheese Dip
- Garlic Basil Roasted Chicken with Tomatoes

I’m so happy to hear you all had a relaxing holiday! My kids needed the time away from the screens too and it’s so nice to see them run around.
Thank you so much for the review and I’m so happy you are enjoying the book so far. It was definitely a labor of love ❤️
