Cinco de Mayo may have been a couple of weeks ago, but I’m still craving the Mexican flavors. Bring on all the salsa, the jalapeno, the tequila. I’ve indulged in more guacamole and salsa these past couple of weeks than I should admit. But I can’t help it. So good.

Today’s recipe features some of the flavors of Mexico – chorizo (a Mexican pork sausage) and fresh avocado. It’s a recipe that I’ve been wanting to make for some time but it took me forever for the stars to align – to find chorizo in the store AND have the time and desire to toy to a new recipe.

This Chorizo Potato Hash was everything I had hoped it would be, albeit a difficult dish to photograph in the skillet, without the topping (all that brown!). It isn’t terribly spicy, but the chorizo gives the hash a wonderful flavor which is complimented by the fresh avocado.

It’s not a hard dish to make but it is just different enough (with the use of chorizo instead of corned beef that is more common for a breakfast hash) to feel indulgent and comforting at the same time. If you’re making the hash from scratch, it takes a bit too much time for a normal weekday breakfast, but it is a fabulous weekend brunch or breakfast-for-dinner option. In the Recipe Notes, I also give you an option of using leftover roasted potatoes, which will shorten the cooking time a bit.

Recipe Notes:

  • If you have leftover roasted potatoes, you can use them in this recipe. Add the leftover potatoes along with diced onion directly to the cooked chorizo (no need to transfer the chorizo to a separate bowl while potatoes cook), sauteing until hot throughout. Using leftover roasted potatoes will shorten the cooking time a bit. 
  • Like it spicy? Add a diced jalapeno when you add the onions. You can also serve this with salsa or hot sauce.
  • Troubleshooting: If your potatoes aren’t cooking through, cover the pan and allow to cook, covered, for about 10 minutes. Your potatoes were probably cut too large. Cooking them covered will speed up the cooking time and ensure that the potatoes are cooked throughout, but will mean that your potatoes won’t be as crispy. 
  • Leftovers? Refrigerate and reheat in a skillet (you can use the microwave but the potatoes won’t be crispy) and top with a freshly fried egg and diced avocado.

Ingredients

Ingredients for the Hash:

  • 1 lb. Mexican chorizo
  • 1 Tbs. unsalted butter
  • 2 Tbs. olive oil
  • 2 russet potatoes peeled, cut into 1/4-inch dice
  • 1 small sweet onion diced small
  • freshly ground black pepper
  • kosher salt

Ingredients for the Toppings:

  • 1/2 Tbs. unsalted butter
  • 4 large eggs
  • freshly ground black pepper
  • kosher salt
  • 1 ripe avocado 1/2-inch dice.

Instructions

Make the Chorizo-Potato Hash:

  1. Heat a 12-inch non-stick skillet over medium heat. Remove chorizo from casings (discard casings) and add to skillet. Saute, breaking up chorizo with a wooden spoon to create crumbles, until cooked throughout. Use a slotted spoon to transfer chorizo to a bowl. Do not drain any drippings from skillet.

  2. Add butter and extra virgin olive oil to the hot skillet. When butter is melted, add the potatoes, allowing to cook untouched for 10 minutes. Stir and add onion. Season the entire skillet with a generous pinch of kosher salt and pepper, and continue to saute for another 5-10 minutes, until potatoes are crispy on the outside and soft on the inside.

  3. Add chorizo back to skillet and saute for another 5 minutes, until chorizo is hot again and your toppings are ready.

Prep the Toppings and Serve:

  1. While hash finishes cooking, in a medium skillet over medium-low heat, melt butter and swirl to cover pan. Crack eggs and add to hot skillet, being careful not to break the yolk. Season with salt and pepper. Cook to desired doneness (we prefer ours more well done to over easy).

  2. Serve hash hot, topped with a fried egg and diced avocado.

    I’ve made something similar with veggie chorizo and butternut squash instead of potatoes….very good with butternut.
