I’m the queen of signing up for too much stuff, and this week has been no exception. Over the past week, I’ve had two days off from work plus the weekend but barely put a dent in my to-do list. We enjoyed a very busy but very fun weekend with my parents – watching Mr. Nutterbutter’s first soccer game, a dinner and show out, and then day-long family event at work. The couple of days off I had were filled with baking, cleaning my oven (one recipe overflowed and cleaning it was not without its challenges!) and running errands. It never ceases to amaze me how errands seem to pile up when you’re not looking. Am I right?

These chocolate covered slices were one of the recipes I squeezed in last week, much to the delight of my little man and husband. They’re pretty quick and easy to make – they only take as long as they do because you have to let the chocolate set. But sweet apples and rich dark chocolate are a combo made in heaven. Add a little sprinkles (because what kid doesn’t love sprinkles) and you’re good to go!

A Few Recipe Notes:

  • I used Envy apples in this recipe, and got about 3 slices per apple.
  • I also used Chocoley Bada Bing Bada Boom Dipping and Coating Chocolate (both the dark chocolate and the white chocolate) to cover the apples. As of January 2020, Chocoley is no longer available but Wilton candy melts or candy bark would work well.
  • Decorate as desired. I used white chocolate drizzle and fallish sprinkles, but a caramel drizzle and/or chopped nuts would also be delicious.
  • These sweet bites are best eaten within 24 hours.

Chocolate Covered Apple Slices

Sweet apples get coated in rich dark chocolate for an easy sweet treat.

Ingredients

  • 1 apple
  • 1 c. dark chocolate melting chocolate or candy melts
  • 1/4 c. white chocolate melting chocolate or candy melts
  • 1 Tbs. sprinkles

Instructions

  1. With the apple sitting on a cutting board, core pointed straight down, slice slices off apples so that you have 1-2 inch flat surface on each. Slice each apple into thick slices - about 1/2-inch to 3/4-inch thick. (One apple should yield 3-4 slices.) Remove seeds from slices. Pat slices dry and set on a piece of paper towel.

  2. Lay a piece of parchment paper or silpat on a clean counter.

  3. Place dark chocolate in a shallow bowl and melt in the microwave, on 30 second intervals, stirring until completely melted. Repeat with white chocolate in a separate bowl (doesn't need to be shallow.)

  4. Insert skewer or popsicle stick into the bottom of each apple slice (may need to use a knife to slit a whole in the bottom, if using a popsicle stick).

  5. Working quickly, dip apple slices first in dark chocolate, turning and using a spoon if needed to coat complete. Tap gently to allow excess dark chocolate to drip back into bowl. Place on prepared parchment paper or silpat. Continue with dark chocolate.

  6. Use a spoon to drizzle dark chocolate-covered apple slices with a bit of white chocolate. Top with sprinkles. Allow to sit on the counter until chocolate sets.

  7. Serve immediately or cover. Apple slices are best if eaten within 24 hours.
