Gluten-Free Blueberry Crisp for Two

Planted years ago, the bushes are now beasts that produce way, way more than she and my father-in-law (and nearby family) can possibly eat. We’re too far to help her out on a regular basis, but every few years, the stars align and we see each other during prime blueberry season – and we benefit.  White ramekin of Blueberry Crisp with a crumble topping This year, we met my mother-in-law, sister-in-law and her family for a little summer getaway in the Smokey Mountains. The drive was a few hours shy of the halfway mark between our houses, and in an area with better COVID stats than my in-laws area. And my mother-in-law brought us a gallon bucket of blueberries.  We spent a wonderful few days in slightly cooler and much less humid weather. We enjoyed walking in the mountains, a gorgeous view pretty much everywhere, and lots of playtime for my kids and their cousins. Despite a full house, we didn’t make it through that bucket of blueberries and were sent home with quite a bit.  White ramekin of Blueberry Crisp with a crumble topping Thus, Blueberry Crisp for Two… because I wasn’t sure my picky, picky kids would eat it. Turns out, Mr. Nutterbutter was a fan and was pissed my husband finished his. I ended up making a second batch the next night so that my little guy could have his own. And you know what? I didn’t feel guilty about it. This Blueberry Crisp is mostly blueberries – just a touch of sugar mixed in, and a few tablespoons of crumble, letting that seasonal produce shine. I don’t love fresh blueberries – they’re alright, just not my favorite – but ooey, gooey blueberries warm and sweet from the oven? I could eat it all night long.

Recipe Notes for Gluten-Free Blueberry Crisp for Two:

  • Like more crumble topping? Double it! Or add coarsely chopped pecans (and increase the amount of maple syrup slightly). 
  • Substitutions for Pecan Meal: Use almond meal to keep this gluten-free. 
  • Optional: Serve topped with a scoop of vanilla ice cream.

Gluten-Free Blueberry Crisp for Two

Want a healthier dessert? This Gluten-Free Blueberry Crisp is it. Just a handful of ingredients and lots of fresh blueberries, this is one summer dessert you don’t have to feel guilty about.

Ingredients

  • 2 c. fresh blueberries
  • 1/2 Tbs. granulated sugar
  • 2 Tbs. pecan meal
  • 2 Tbs. old-fashioned oats check label to confirm oats are gluten-free
  • 1 Tbs. pure maple syrup
  • pinch table salt
  • cooking spray

Instructions

  1. Preheat oven to 375F.

  2. Mix blueberries and granulated sugar in a bowl and set aside.

  3. In a separate, small bowl combine pecan meal, oats, salt and maple syrup. Set aside.

  4. When oven is preheated, divide blueberries between two ramekins. Top each with half of the pecan-oat topping. Spray tops with cooking spray and bake in preheated oven for 25 minutes.

  5. Remove from oven and allow to cool for 5-10 minutes before serving. Serve hot, topped with ice cream, if desired.

    This was perfect for a small gathering I had where the girls are very conscientious about what they eat, I split into 4 smaller ramekins and they gobbled it down!
