Today- my last recipe this week – is about brunch beverages.

Do you have a go-to drink that you make or order when you’re serving or going out for brunch?

I’ve usually had my cup or two of coffee by the time I make it to brunch, so for me, I rarely have coffee with brunch. If I’m celebrating a holiday or a special event in someone’s life, I usually make or order some sort of bubbly cocktail. Mimosas are traditional (and I always have the ingredients for those) but at home, I love to change it up with a 2-ingredient Sparkling Pamplemousse or a Champagne Cosmo.

When I go out for brunch, I tend to be a bit more boring. I usually stick with water or if I’m feeling like something different or I need a little more caffeine, unsweetened iced tea or an Arnold Palmer.

I don’t frequently have iced tea at home. I’ll go through a kick where I’ll make it and drink a whole lot of it for a week but I’m usually the only one that will drink it. I prefer my iced tea unsweetened, maybe with a lemon wedge. My southern-born husband likes his tea sweet, so sweet that even watered down, I can’t drink it.

This Pimm’s Iced Tea is a fun mix that both of us will enjoy. Made with unsweetened tea, the cocktail is spiked and sweetened with Pimm’s liquor and a little agave, giving it not only a slightly sweet taste but a lovely flavor. Use your favorite homemade or store-bought black iced tea, and adjust Pimm’s, agave, and lemon to taste. Quick, simple, and a bright accompaniment to your next brunch. Or, even better, sweet treat to enjoy during spring afternoon sunshines.

Ingredients

  • 3 oz. Pimm's liquor
  • 1 Tbs. agave
  • 1 Tbs. fresh lemon juice
  • 6 oz. unsweetened black iced tea
  • Lemon or orange wedge for garnish optional

Instructions

  1. In a larger (12-oz.) highball glass or standard drinking glass, stir together Pimm's, agave and lemon juice. Add about 1/2 cup of ice. Top with iced tea. Gently stir and serve immediately.
